Vrat Wala Khatta Meetha Kaddu is a very simple, tasty, and quick recipe of Pumpkin that takes only 15 minutes to cook. Cooked on special occasions like Navratri, Mahashivratri, the month of Shraavana, Chaturthi, Ekadashi, etc. This North Indian recipes is prepared with only those ingredients which are allowed in fasting like pumpkin, sugar, lemon juice, ghee, red chili powder, and coriander.
This Pumpkin Sabzi Recipe is also known as kaddu sabji, sitafal ki sabji, pethe ki sabji, kohda ki sabji, kashifal ki sabji, kaddu sabzi, in some places. This sabji is served in Indian homes as a side dish during lunch or dinner along with any Indian Flatbread and Curry Dish.
Sweet, sour, and spicy pumpkin sabzi can be made on regular days and also during Navratri fasting or Ekadashi fasting. Ingredients
- 500 grams Pumpkin (Kaddu or Petha)
- 2 tbsp Ghee / Oil
- ½ tsp Cumin Seeds (Jeera)
- 1 tsp Ginger (finely chopped)
- 1 tsp Green Chilli (finely chopped)
- 1½ tsp Coriander Powder (Optional)
- ½ tsp Red Chilli Powder
- ¾ tsp Sendha Namak or Rock Salt (Adjust as per taste)
- ¼ cup Water
- 1 tsp Sugar
- 1 tsp Lemon Juice
- 1 tbsp Fresh Coriander (finely chopped)
Instructions
- To make Kaddu Sabzi for navratri upvas, first of all, we will take pumpkin (petha) and cut the pumpkin into small pieces and wash it.
- Finely chop the green chilies and ginger.
- Firstly, heat Ghee / Oil in a Kadai or pan.
- Additionally, add cumin seeds (jeera) and saute for a few seconds.
- Once it crackles then add diced pumpkin and sendha namak.
- Mix all the ingredients.
- After that, add finely chopped ginger and green chilies and mix well.
- Now add ¼ cup water.
- Further, cover the Kadai / pan with a lid.
- Cook for 5-6 minutes on low flame or until they become mushy.
- Stir in between.
- Additionally, add coriander powder and Red chili powder.
- Mix well and cook for 2-3 minutes until the spices are well combined with petha sabzi.
- Additionally, add sugar and lemon juice and mix well.
- Cook for 2-3 minutes on high flame.
- If the sitafal sabji still looks watery or runny to you, then evaporate the water by cooking it without the lid on high flame and stir in between. This pethe ki sabzi should not be dry nor watery, just in between.
- Add finely chopped coriander leaves and mix well.
- Now switch off the flame.
- Finally, garnish with a few coriander leaves and serve kaddu ki sabji hot with Kuttu paratha or kuttu poori.
Notes
- You can use any type of fresh pumpkin or kaddu like yellow pumpkin or orange pumpkin.
- If you don’t eat coriander powder in Navratri fast then you can ignore that step. It is totally optional.
- You can adjust the amount of sugar according to your taste.
