This Mixed Veg Pickle Recipe or mixed pickle recipe is a great accompaniment to any Indian breakfast recipe, lunch recipe, or dinner recipes.

I learned this Gajar Gobhi Muli pickle recipe from my mom. My hubby who usually doesn’t like to eat pickles just loves this mixed veg pickle with everything.

This pickle is made with fresh carrot, radish, and cauliflower. The spices used in this Gobhi Gajar Mooli pickle are similar to any traditional Pickle Recipe but have the extra flavors of radish, cauliflower, and carrot in it.

I always make this mixed veg pickle in winter and enjoy it. This bitter-sweet pickle goes well with chole bhature or stuffed parathas or just about anything.

There are many types of pickles that are made in different ways and with different spices and herbs. Some pickles have a shelf life of up to 1-2 years while some pickles are made according to the season and are used in 15-20 days.

Ingredients
  

Mixed Pickle Ingredients:

  • 500 grams Carrot / Gajar (chopped)
  • 500 grams Radish / Mooli (chopped)
  • 500 grams Cauliflower / Phool Gobhi (chopped)
  • ½ cup Mustard Oil
  • ¼ tsp Asafoetida (Hing)
  • 3 tbsp Rai (Grounded)
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 2 tsp Coriander Powder
  • 2½ tsp Salt (adjust as per taste)

Instructions
 

  • First, chop the cauliflower in medium florets.
  • Peel and then chop the carrots and radish in 1.5 to 2 inches batons or sticks.
  • Secondly, rinse the vegetable and drain the excess water.
  • Further, Heat enough water in a utensil. Put all the vegetable pieces in boiling water, and boil for 4-5 minutes.
  • After that, strain the water from the vegetable with the help of a strainer.
  • Now, dry the vegetables on a thick cloth for 4-5 hours in the sunlight.
  • When all the water has dried up then put the vegetables in a big bowl.
  • Additionally, add Mustard Oil, Asafoetida (Hing), Rai (Grounded), Turmeric Powder, Red Chilli Powder, Coriander Powder, and Salt (adjust as per taste).
  • Mix all the ingredients well.
  • After that, fill the gajar gobhi muli ka rai pickle in a dry glass or plastic container.
  • Now, put the pickle in the sunlight for 3-4 days.
  • Stir the pickle once a day.
  • The pickle will turn sour and tasty in 3-4 days.
  • Finally, the mixed vegetable pickle is ready.
