Dosa Filling Recipe for Spring Roll Dosa with step-by-step photos:
1. Firstly hand-shred the cabbage into bite-sized pieces as per the pic, wash, and thoroughly dry.
2. Cut the onions, bell peppers into julienne style, finely chop the garlic and grate the ginger.
3. Further, heat oil in a wok/kadai on a high flame.
4. Once the oil becomes hot, add chopped garlic cloves and Saute till the garlic is light brown.
5. Further, add chopped onions and saute for about 1-2 minutes on low-medium heat until the onions are translucent. Keep stirring often.
6. Now add grated ginger, chopped cabbage and bell peppers to the kadai.
7. Add red chili powder, Black pepper powder, and salt and give all the ingredients a stir.
8. Cook them for about 2-3 minutes on low-medium heat. Keep stirring in between.
9. Now add soy sauce, vinegar, homemade chili garlic sauce and mix well.
10. Cook them for about 1-2 minutes on high flame until water is evaporated.
11. Make sure that the dosa filling are not overcooked.
12. Transfer the dosa filling or stuffing into a bowl and keep aside.

3. Now, heat a non-stick dosa tawa or a flat pan over medium-high heat.
4. After that sprinkle little water and clean it with a cotton cloth. It is just to bring down the temperature of the tawa.
5. Take a ladleful of dosa batter and pour it into the center of the tawa.
6. Using the back of the ladle, spread the batter in a circular motion to make a thin dosa.
7. Drizzle a little oil around the edges of the dosa and on the top.
8. Cook the dosa until the edges turn golden brown and the bottom is crispy.
9. Spread a portion of the spring dosa filling on the dosa, leaving the sides empty as per the picture.
