One of our favorite indo chinese recipe. veg fried rice recipe is a indo chinese dish of steamed rice that has been stir-fried in a wok and usually mixed with other ingredients, such as eggs, vegetables, paneer, mushrooms and often served as a complete dish.

chilli paneer, gobi manchurian, vegetable manchurian, schezwan fried rice, egg fried rice, veg spring roll, schezwan egg fried rice are some of the most common ones from the​ indo chinese cuisine.​ whenever we order an indo chinese menu then veg fried rice is always there. along with fried rice we usually order different indo chinese vegetables recipes or snacks like gobi manchurian, vegetable manchurian or hot and sour vegetable sauce.

you can add vegetables as per your choice. here i have used onions, french beans, spring onion, cabbage, carrots and capsicums. vegetable fried rice is perfect as a snack or main course and for hosting great parties. in its typical preparation boiled rice are tossed with garlic, ginger, chopped vegetables, soy sauce, chilli sauce, tomato ketchup and spices that gives it its signature taste and texture.

there are so many ways a fried rice can be made. follow this simple recipe to prepare delicious restaurant style veg fried rice.

one of our favorite indo chinese recipe. fried rice is a indo chinese dish of steamed rice that has been stir-fried in a wok and usually mixed with other ingredients, such as eggs, vegetables, paneer, mushrooms and often served as a complete dish.

Ingredients
  

  • basmati rice – 2 cup
  • onion – 1 small size finely chopped
  • capsicum red, green and yellow – ½ cup (finely chopped)
  • carrot – ½ mid size finely chopped
  • spring onions – 1-2 finely chopped
  • cabbage – ¼ cup finely chopped
  • french beans – 2-3 finely chopped
  • oil – 4-5 tbsp
  • ginger garlic paste – 1 tsp
  • red chilli garlic sauce – 1 tsp
  • vinegar – 1 tbsp
  • soy sauce – 2 tbsp
  • black pepper powder – ½ tsp
  • m.s.g monosodium glutamate or ajinomoto – ½ – 1 tsp
  • water – 2-3 liter as per required
  • sesame oil – few drops optional
  • salt – as per taste

Instructions
 

  • boil water in a deep pan.
  • after the water comes to a boil then add the rice.
  • now add salt, 2 tbsp oil and mix well.
  • cook on a medium flame for 8 to 10 minutes or till the rice is 90% cooked.
  • make sure you boil the rice properly about 90 %.
  • drain them and wash the rice with cold water so that cooking process is stopped and the excess starch is removed.
  • after washing the rice with cold water add 2 -3 tbsp oil and mix well with hands.
  • cut the vegetables as mentioned in ingredient section.
  • heat a wok (kadai) and add 1-2 tbsp oil.
  • put on the flame to high.
  • now add chopped onions and cook the onions for about 2 minutes.
  • add ginger garlic paste and cook for another one minutes.
  • after that add chopped carrots and chopped beans. keep the flame on high and roast the veggies for 2-3 minutes. now add chopped capsicum and chopped cabbage into it. saute the veggies for 1-2 more minutes.
  • now add boiled rice, soy sauce, vinegar, red chilli garlic sauce into the veggies and mix well.
  • add m.s.g ( monosodium glutamate) or ajinomoto, salt, black pepper powder and mix well.
  • now add few drops of sesame oil and toss it well and stir fry for 3-4 minutes on high heat.
  • sprinkle some chopped spring onion on it. mix it well.
  • turn off the flame.
  • hot veg fried rice or indo chinese style fried rice is ready to be served. serve veg fried rice plain or accompanied with veg manchurian curry or vegetables in hot and sour sauce.

Notes

if you are using mushrooms then the mushrooms have to be chopped fine, so that they cook quickly on a high heat while stir frying.
