Ingredients

  • cups All Purpose Flour / Maida
  • 2 tsp Cocoa Powder
  • 1 cup Milk
  • cup Curd
  • ¼ cup Butter
  • 1 tsp Vanilla Extract
  • ¾ cup Fine Sugar
  • cup Cooking Oil
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Cinnamon Powder
  • ¼ tsp Clove Powder
  • ¼ tsp Nutmeg Powder
  • 1 tsp Orange Zest
  • ¼ cup Chopped Nuts
  • ½ cup Mixed Dried Berries
  • 1 tbsp Golden Raisins
  • 1 tbsp Black Raisins
  • 1 tbsp Chopped Dried Apricots
  • 1 tbsp Chopped Glazed Cherries
  • 1 tbsp Tutti Frutti

Instructions

  • Preheat Oven: Preheat the oven to 170°C (340°F). Grease and line a cake tin with parchment paper.
  • Mix Wet Ingredients: In a large bowl, whisk together curd, milk, butter, oil, vanilla extract, and sugar until smooth and well combined.
  • Sift Dry Ingredients: In another bowl, sift the all-purpose flour, cocoa powder, baking powder, baking soda, cinnamon, clove, and nutmeg powder.
  • Combine Wet and Dry: Gradually fold the dry ingredients into the wet mixture until just combined.
  • Add Zest, Nuts, and Fruits: Gently fold in the orange zest, chopped nuts, and mixed dried fruits.
  • Bake: Pour the batter into the prepared cake tin. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and Serve: Let the cake cool in the tin for 20 minutes, then transfer to a wire rack to cool completely before serving.
