Ingredients

  • 1 kg Frozen Malai / Milk Cream collected over 2–3 weeks and thawed to room temperature

Instructions

  • Thaw: Bring frozen malai to room temperature by taking it out of the freezer 3–4 hours before cooking.
  • Melt: Pour thawed malai into a heavy-bottomed kadhai and heat over a low flame, stirring occasionally.
  • Simmer: Cook patiently until the ghee separates completely and the milk solids turn a light golden color.
  • Strain: Turn off the flame and let it cool slightly. Pour through a fine metal sieve into a dry glass jar.
  • Collect: Press the milk solids gently with a spoon to extract remaining ghee. Collect your pure Desi Ghee in the jar and fresh Khoya in the bowl.
