- 1 Onion (finely chopped)
- ½ Capsicum (finely chopped)
- 1 Tomato (finely chopped)
- 1 tbsp Carrot (grated)
- 2 tbsp Cabbage (finely chopped)
- 1 tsp Grated Ginger
- 1 Green Chilli (finely chopped)
- 2 tbsp Coriander (finely chopped)
- 1 tsp Salt
- ½ tsp Chaat Masala
- ¼ tsp Red Chilli Powder
- 2 cups Dosa Batter
- Oil for cooking (as needed)
In a bowl, mix onion, capsicum, tomato, carrot, cabbage, ginger, green chilli, and coriander.
Add ½ tsp salt, ½ tsp chaat masala, and ¼ tsp red chilli powder. Mix well.
Let the spiced veggies rest for 10 minutes to release moisture and enhance flavor.
Take 2 cups of instant dosa batter and add ½ tsp salt (adjust carefully, as veggies already contain salt).
Mix the rested veggies into the batter.
Heat a tawa or non-stick pan, and lightly grease it with oil. Pour a ladleful of the mixture and spread it slightly.
Cook on medium heat till golden on one side, then flip and cook the other side till done.
Serve this hot and delicious Instant Vegetable Uttapam with chutney or sambar.
