Prepare Lauki: Peel, grate, and squeeze out the water from the bottle gourd. Save the water for the gravy.
Make Kofta Mixture: Mix grated lauki with besan, spices, and salt. Shape into balls without adding water.
Fry Koftas: Deep-fry the kofta balls in medium-hot oil until golden brown and crisp. Set aside.
Prepare Gravy: Sauté hing, cumin, onions, ginger, chilli, and tomatoes with spices until aromatic. Grind into a smooth paste.
Thicken Gravy: Add roasted besan paste, curd, reserved lauki water, and normal water. Cook until the gravy thickens and simmers.
Combine: Add fried koftas to the gravy before serving. Garnish with fresh coriander.
