Ingredients

For Kofta Balls:

  • 2 cups Lauki / Bottle gourd (peeled and grated)
  • 3 tbsp Besan / Gram flour
  • 1 tsp Green Chili (finely chopped)
  • ½ tsp Red Chili Powder
  • 1 tsp Ginger (grated)
  • ½ tsp Salt (adjust as per taste)
  • ¼ tsp Turmeric Powder
  • Oil (for frying the koftas)

For Kofta Gravy:

  • 2 tbsp Oil
  • 1 cup Onion (finely chopped)
  • 1 cup Tomato (finely chopped)
  • 1 tsp Green Chilli (finely chopped)
  • 1 tsp Ginger (grated)
  • 1 pinch Hing / Asafoetida
  • ½ tsp Cumin seeds / Jeera
  • 2 tsp Coriander Powder
  • ½ tsp Red Chili Powder
  • ¼ tsp Turmeric Powder
  • ½ tsp Garam Masala
  • ½ tsp Kashmiri Red Chilli Powder (optional - for the colour)
  • 1 tsp Roasted Gram Flour / Besan
  • 2 tsp Curd / Dahi
  • 2 cups Water (as needed)
  • ½ tsp Salt (adjust as per taste)
  • Fresh coriander leaves (chopped)

Instructions

  • Prepare Lauki: Peel, grate, and squeeze out the water from the bottle gourd. Save the water for the gravy.
  • Make Kofta Mixture: Mix grated lauki with besan, spices, and salt. Shape into balls without adding water.
  • Fry Koftas: Deep-fry the kofta balls in medium-hot oil until golden brown and crisp. Set aside.
  • Prepare Gravy: Sauté hing, cumin, onions, ginger, chilli, and tomatoes with spices until aromatic. Grind into a smooth paste.
  • Thicken Gravy: Add roasted besan paste, curd, reserved lauki water, and normal water. Cook until the gravy thickens and simmers.
  • Combine: Add fried koftas to the gravy before serving. Garnish with fresh coriander.
  • Serve: Pair with rice, roti, or naan for a complete meal. Enjoy!
