Prepare the Tomato Sauce: Blanch fresh tomatoes, peel, deseed, and chop finely, or crush canned tomatoes.
Heat olive oil, sauté garlic and onion until translucent.
Add tomatoes, oregano, salt, and chili flakes. Simmer for 15-20 minutes.
Adjust seasoning and add fresh basil in the last 5 minutes.
Boil pasta in salted water until al dente.
Reserve ½ cup pasta water and drain the rest.
Toss cooked pasta in the skillet with the sauce.
Adjust consistency with reserved pasta water if needed.
Simmer for 1-2 minutes to absorb flavors.
Plate the pasta, sprinkle Parmesan cheese, and garnish with basil and olive oil.
