Ingredients

  • 400 grams Pasta (spaghetti, penne, or your choice)
  • 4 large Ripe Tomatoes (or 400 g canned peeled tomatoes)
  • 3 tbsp Extra Virgin Olive Oil
  • 3 Garlic Cloves finely chopped
  • 1 medium Onion finely chopped
  • 1 tsp Dried Oregano
  • 1 tsp Red Chili Flakes (optional)
  • Salt to taste
  • ½ tsp Freshly Ground Black Pepper
  • ½ cup Fresh Basil Leaves roughly chopped
  • ¼ cup Freshly Grated Parmesan Cheese (optional)
  • Water for boiling pasta

Instructions

  • Prepare the Tomato Sauce: Blanch fresh tomatoes, peel, deseed, and chop finely, or crush canned tomatoes.
  • Heat olive oil, sauté garlic and onion until translucent.
  • Add tomatoes, oregano, salt, and chili flakes. Simmer for 15-20 minutes.
  • Adjust seasoning and add fresh basil in the last 5 minutes.
  • Boil pasta in salted water until al dente.
  • Reserve ½ cup pasta water and drain the rest.
  • Toss cooked pasta in the skillet with the sauce.
  • Adjust consistency with reserved pasta water if needed.
  • Simmer for 1-2 minutes to absorb flavors.
  • Plate the pasta, sprinkle Parmesan cheese, and garnish with basil and olive oil.
