Ingredients
2cupsBatter(Check out the Batter Recipe)
1½tspSalt
1cupOnionfinely chopped
2tbspFresh Corianderfinely chopped
Instructions
How to make hotel-style onion uttapam:
Take 2 cups of batter recipe in a bowl and add 1 tsp of salt. Mix well until the salt is evenly distributed.
Take 1 cup of finely chopped onions in a bowl. Add 2 tablespoons of freshly chopped coriander leaves and ½ tsp of salt (adjust to taste) and mix well. Your onion mixture is ready.
Heat a non-stick tawa over medium heat. Add a few drops of oil or ghee.
Pour a ladleful of batter in the center. Spread it into a thick pancake (6-8 inches).
Sprinkle the onion mixture evenly on top. Press lightly with a spoon or fingers.
Drizzle oil or ghee around the edges. Cook until the bottom is golden and crispy.
Flip carefully and cook for 1-2 minutes until the onions caramelize.
Serve hot with coconut chutney, chili garlic chutney, or sambar.
