Add 1 cup of grated raw mangoes, 5 tbsp of sugar, and 1 tsp of salt in a large mixing bowl.
Mix well until the sugar and salt are evenly distributed.
Cover the bowl and let the mixture sit overnight, allowing the flavors to meld and the mango to release its juices.
The next day, transfer the mango mixture to a pan, including the syrup that has formed overnight.
Add ½ tsp Black Pepper Powder, ¼ tsp Crushed Cardamom, ¼ tsp Red Chilli Powder, ¼ tsp Garam Masala and mix well.
Cook the mixture on low-medium heat, stirring occasionally, until the mangoes soften further. This should take about 12-15 minutes.
Taste the chutney and adjust the sweetness by adding more sugar if needed.
Once the chutney has reached the desired consistency, remove it from the heat and let it cool completely.
Transfer the aam ki khatti meethi chutney to an airtight container and store it.
