- 500 grams Singhara / Water Chestnut
- 2 tbsp Ghee
- ½ tsp Cumin Seeds / Jeera
- 2 Green Chilies finely chopped
- 1 tsp Ginger grated
- 1 tsp Sendha Namak / Rock Salt adjust as per taste
- ½ tsp Red Chili Powder optional
- 2 tsp Coriander Powder
- 1½ tsp Lemon Juice
- 2 tbsp Fresh Coriander finely chopped
Wash the Singhara thoroughly and pressure cook with water for 2 whistles. Once cooled, strain, peel, and chop into bite-sized pieces.
Heat ghee in a pan, add cumin seeds and let them splutter.
Saute chopped green chilies and ginger, coriander powder, red chili powder (optional), and the chopped Singhara.
Season with rock salt and lemon juice.
Cook for 8-10 minutes, stirring occasionally until the Singhara is well-coated with spices.
Garnish with fresh coriander and serve hot with Kuttu ka paratha or poori during Navratri fasting.
