Ingredients for Boiling Soya Chunks:
1cupSoya Chunks
2cupsWater
½tspSalt
For Spinach Gravy:
2cupsSpinach / Palak(washed and chopped)
1Green Chili
½tspSalt
½cupWater
For the Curry:
1Onion(finely chopped)
2Tomatoes(pureed)
1tspGinger-Garlic Paste
1tspCumin Seeds / Jeera
½tspTurmeric Powder
1tspCoriander Powder
1tspRed Chili Powder(adjust to taste)
½tspGaram Masala
2tbspOil
¼cupWater(adjust as needed)
Instructions
Boil Soya Chunks: Boil soya chunks in salted water for 5–7 minutes. Rinse with fresh water, squeeze out excess water, and set aside.
Make Spinach Puree: Blanch spinach with green chili in water for 2 minutes, cool, and blend into a smooth puree.
Prepare Masala: Heat oil, add cumin seeds, then sauté onion, ginger-garlic paste, and tomato puree until oil separates.
Add Spices: Mix turmeric, coriander powder, red chili powder, and salt. Cook for 2–3 minutes.
Cook the Curry: Add spinach puree and soya chunks, mix well, and simmer for 5 minutes. Adjust water as needed.
Final Touch: Add garam masala, mix, and turn off the heat. Serve hot with roti, naan, or rice.
