Gravy Arbi Sabji is a rich and delicious dish made with colocasia or taro roots. Arbi Curry Sabzi Recipe is very popular in North India and is also known as Ghuiya ki sabji, Arbi ki Tari wali Sabji, or Arbi Gravy recipe.

Vrat wali arbi curry or ghuiya sabji – super delicious, easy to make. This falahari rasedar arbi ki sabji is made with boiled arbi and some Indian spices. You can also make a dry version of arbi sabzi aka sukhi arbi recipe in this Navratri season.

Arbi is also known as colocasia, taro, or kochai in India. This arbi masala curry can be consumed during vrat / fasting / upvas with no onion no garlic and the ingredients that are allowed in Navratri fast.

I love making arbi ki sabzi in both style curry and dry. This guiya ki sabji is very tasty and different from the regular arbi ki sabzi. You can serve this arbi ki sabji hot or cold but I love the cold version of this tasty arbi ki sabji recipe.

Ingredients
  

  • 500 grams Boiled Arbi (Colocasia or Taro root)
  • 2 tbsp Ghee / Oil
  • 1 tsp Green Chillies (finely chopped)
  • ½ tsp Carom Seeds (Ajwain)
  • 1½ tsp Coriander Powder
  • ½ tsp Red Chili Powder
  • 1 tsp Lemon Juice
  • 1 tsp Sendha Namak or Rock Salt
  • 1 tbsp Fresh Coriander (finely chopped)
  • 2 cup Water (or adjust as per required)

Instructions
 

  • Firstly, Peel and cut the boiled arbi into 2 cm length pieces.
  • In this dish, we boil the arbi first before peeling it. Boiled arbi does not cause itching in the skin as peeling the raw arbi does.
  • Firstly, heat oil in a heavy-bottomed wok/Kadai.
  • When oil is hot, add ajwain into it. let them splutter for a few seconds.
  • Additionally, add coriander powder, red chili powder, chopped green chilies, and saute for a few seconds.
  • After sauteing the masala, add chopped arbi.
  • Further, mix all the ingredients well and shallow fry them for 2-3 minutes on low flame.
  • After that, add water and mix well.
  • Now add sendha namak and lemon juice to it and mix well.
  • Cook for 5-7 minutes on low heat and stir in between.
  • Further, add chopped fresh coriander and mix well.
  • Switch off the flame now.
  • Finally, hot & delicious arbi masala curry or resedar arbi sabji for Navratri fast is ready to be served.
  • You can serve this arbi ki sabji with kuttu puris and kuttu parathas.

How to make arbi sabzi for Navratri Fast | Recipe of Arbi ki Sabji | arbi ki recipe with step by step recipe with Photos:
