How to make bathua raita | bathua ka raita recipe with step by step photos:

1. Firstly, remove the 250 grams of Bathua Leaves from the stem and discard the stem. Wash the Bathua leaves.

2. Add Bathua leaves and 1 cup of water into the pressure cooker.

3. Pressure cook the bathua leaves for one whistle.

4. After one whistle on a high flame, switch OFF the Gas and open the lid after 5-7 minutes.

5. Keep it aside and let it cool.

6. Now grind the 1 cup of bathua leaves to fine paste in the grinder.

7. Take out the bathua paste into a bowl.

8. Now take another bowl and add 2 cups of chilled plain yogurt. Whisk it until smooth and creamy using a wire whisk or hand blender.

9. Mix whisked curd, ½ tsp black salt, and ½ tsp chaat masala into the bathua paste.

10. Mix all the ingredients well.

11. To make a tadka for this, heat ½ tsp oil in a pan on medium flame.

12. After that add a pinch of Asafoetida/Hing and ½ tsp cumin seeds and roast for a few seconds. The cumin seeds will crackle and become crispy.

13. Immediately pour this tadka over the prepared raita and mix well.

14. Finally, garnish the chenopodium yogurt dip with fresh coriander and enjoy Bathua ka Raita with your meal.
