Step 1: Prepare the Base Masala

1. Heat 3 tbsp mustard oil in a heavy-bottomed kadhai or pan on medium-high flame.

9. Now add 350 grams of shredded cabbage, 1 chopped tomato, ¾ cup green peas, and ½ tsp salt.

10. Cover with a lid and cook for 1–2 minutes on medium flame. This will help the cabbage reduce in volume and soften slightly.

11. Mix all the vegetables well.

12. Cook on medium flame for 2-3 minutes. This softens the cabbage slightly.

Step 5: Add Spices

13. Open the lid and add the dry spices: 1 tsp red chilli powder, ½ tsp turmeric powder, 1½ tsp coriander powder.

14. Mix thoroughly so that the spices coat all the vegetables evenly.

15. Cook for a minute on medium-high flame.

Step 6: Cook Until Done

16. Cover again and reduce the flame. Cook on low heat for 10-12 minutes, or until all the vegetables turn soft.

17. Stir occasionally to prevent burning or sticking.

18. If it starts sticking, sprinkle a little water (1-2 tbsp) and mix well.

Step 7: Finish the Sabzi

19. Once the vegetables are fully cooked, add ½ tsp amchur powder and ½ tsp garam masala.

20. Stir well and cook for an additional minute on high heat to enhance the flavour.

  • 2 medium Onion (sliced)

  • After that, add chopped potatoes and salt. Cook for 3–4 minutes.
  • Now, add cabbage, tomatoes, and green peas. Mix well, cover, and cook on medium flame for 3–4 minutes.
  • Add red chili powder, turmeric, and coriander powder. Mix well.
  • Cover and cook on low flame for 10–12 minutes until veggies are soft, stirring occasionally.
  • Add amchur powder and garam masala to the aloo patta gobhi sabji. Mix and cook for 1 minute on high flame.
  • Finally, add chopped coriander and mix well.
  • Serve hot Cabbage Sabzi with roti or paratha.
