Gobhi ke Danthal ki Sabji Recipe | Dry Cauliflower Stalks Recipe
Ingredients
- 3 cups Cauliflower stalks / gobhi ke danthal (cleaned and chopped)
- 4 medium Potatoes (boiled, peeled and chopped)
- 1 tsp Green Chilli (finely chopped)
- 1 tsp Grated Ginger (fresh)
- 2 tbsp Oil
- 1 pinch Asafoetida / Hing
- ½ tsp Cumin seeds / Jeera
- ½ tsp Turmeric powder
- ½ tsp Red chili powder
- 2 tsp Coriander powder
- ½ tsp Garam Masala
- ½ tsp Amchur Powder
- 1 tsp Salt (Adjust as per taste)
- 2 tbsp Fresh coriander leaves (finely chopped)
Instructions
- Wash the cauliflower stalks thoroughly and peel off any tough outer layers. Chop the stalks into small, bite-sized pieces.
- In a pressure cooker, add the chopped stalks, and enough water to cover them. Cook for 2 whistles, then allow the pressure to release naturally.
- Drain the boiled stalks and squeeze out excess water gently using your hands.
- Heat oil in a pan on medium flame. Add cumin seeds and a pinch of asafoetida. Let the seeds splutter.
- Add turmeric powder, red chili powder, coriander powder, garam masala, amchur powder, and cook for a few seconds.
- Now add boiled potatoes, boiled cauliflower stalks, grated ginger, finely chopped green chilli, and salt.
- Combine everything thoroughly and cook for 5-6 minutes, stirring occasionally.
- Once the sabji is well-cooked, then turn off the flame. Garnish with freshly chopped coriander leaves.
Step-by-Step Recipe
1. Wash the cauliflower stalks/stems thoroughly and peel off any tough outer layers.
2. Chop the cauliflower stalks into small, bite-sized pieces. You can also check my video recipe for this.
3. In a pressure cooker, add the 2 cups of chopped stalks, and enough water (approx 3 cups) to cover them.
4. Cook for 2 whistles, then allow the pressure to release naturally.
5. Drain the boiled stalks, let cool down, and squeeze out excess water gently using your hands.
6. Heat oil in a pan on medium flame. Add cumin seeds and a pinch of asafoetida. Let the seeds splutter.
7. Add ½ tsp Turmeric powder, ½ tsp Red chili powder, 2 tsp Coriander powder, ½ tsp Garam Masala, ½ tsp Amchur Powder and cook for a few seconds.
8. Now immediately add boiled cauliflower stalks, 4 medium-sized boiled potatoes, 1 tsp of finely chopped gree chilli, 1 tsp of freshly grated ginger, 1 tsp of salt.
9. Combine everything thoroughly and cook for 5-6 minutes on low-medium flame, stirring occasionally.
10. Once the sabji is well-cooked, then turn off the flame.
11. Finally, add freshly chopped coriander leaves and mix well.
12. Serve Gobhi ke Danthal ki Sukhi Sabji hot with roti, paratha, or dal and rice for a complete meal. It’s a great way to utilize cauliflower stalks while adding variety to your menu.
Tips
1. Ensure the stalks are tender before cooking. If they’re still tough after boiling, cook them a little longer.
