Ingredients

  • 2 cups Cholai/Rajgira/Amaranth puffed
  • 1 cup Sugar
  • ½ cup Water
  • 1 tsp Ghee for greasing the tray and lightly coating your hands

Instructions

  • Grease a tray or plate with a little ghee and keep it ready.
  • Prepare a sugar syrup by cooking sugar and water until slightly thick and sticky.
  • Add puffed cholai (rajgira) and mix quickly until evenly coated with the syrup.
  • Immediately transfer the mixture to the greased tray.
  • Spread and flatten it into an even layer using a greased spatula.
  • Cut into squares or diamonds while the mixture is still warm.
  • Let the Cholai Barfi cool completely and set.
  • Separate the pieces and serve your homemade Rajgira Barfi.
