Ingredients
Egg Bhurji Ingredients:
4Egg
2tbspOnion(finely chopped)
2tbspCapsicum(colorful - finely chopped)
1tbspSpring onion(finely chopped)
1tbspFrench Beans(finely chopped)
1tbspCarrot(finely chopped)
1tspOregano Seasoning
½tspRed Chili Flakes(optional)
½tspGinger Powder
½tspBlack Pepper Powder
½tspSalt(adjust as per taste)
1tbspButter / Oil
Instructions
Firstly, take a bowl and break the eggs and pour all egg yolk into the bowl.
Further add black pepper powder, oregano seasoning, red chili flakes (optional), and ginger powder into the eggs and mix well.
Whisk the eggs gently with a fork or egg whisker for a few minutes and keep this aside.
Additionally, finely chop all veggies: onion, capsicums, carrot, and french beans. Keep them aside.
After that, take a nonstick pan, add 1 tbsp of butter/oil, and heat.
When the oil gets hot, add finely chopped onion.
Cook them till the onions are translucent.
After that, add the rest of the finely chopped vegetables capsicums, french beans, carrots, etc.
Further, add salt and cook them till the vegetables get soft.
Now add the egg mixture and scramble lightly.
Keep stirring this mixture until small crumbs are formed.
Further, cook them for about 4-5 minutes and keep whisking them regularly.
Stir anda bhurji constantly to prevent burning.
Further, add some finely chopped spring onion and stir well.
Cook the egg bhurji well until properly cooked.
After that, switch off the gas.
Finally, your delicious and healthy egg bhurji is ready to be served.
Serve this anda bhurji or scrambled eggs with rice or bread or pav or chapati or parathas.
Notes
You can add vegetables as per your taste like onion, capsicum, carrot, french bean, and spring onion.
