Ingredients
  

Egg Bhurji Ingredients:

  • 4 Egg
  • 2 tbsp Onion (finely chopped)
  • 2 tbsp Capsicum (colorful – finely chopped)
  • 1 tbsp Spring onion (finely chopped)
  • 1 tbsp French Beans (finely chopped)
  • 1 tbsp Carrot (finely chopped)
  • 1 tsp Oregano Seasoning
  • ½ tsp Red Chili Flakes (optional)
  • ½ tsp Ginger Powder
  • ½ tsp Black Pepper Powder
  • ½ tsp Salt (adjust as per taste)
  • 1 tbsp Butter / Oil

Instructions
 

  • Firstly, take a bowl and break the eggs and pour all egg yolk into the bowl.
  • Further add black pepper powder, oregano seasoning, red chili flakes (optional), and ginger powder into the eggs and mix well.
  • Whisk the eggs gently with a fork or egg whisker for a few minutes and keep this aside.
  • Additionally, finely chop all veggies: onion, capsicums, carrot, and french beans. Keep them aside.
  • After that, take a nonstick pan, add 1 tbsp of butter/oil, and heat.
  • When the oil gets hot, add finely chopped onion.
  • Cook them till the onions are translucent.
  • After that, add the rest of the finely chopped vegetables capsicums, french beans, carrots, etc.
  • Further, add salt and cook them till the vegetables get soft.
  • Now add the egg mixture and scramble lightly.
  • Keep stirring this mixture until small crumbs are formed.
  • Further, cook them for about 4-5 minutes and keep whisking them regularly.
  • Stir anda bhurji constantly to prevent burning.
  • Further, add some finely chopped spring onion and stir well.
  • Cook the egg bhurji well until properly cooked.
  • After that, switch off the gas.
  • Finally, your delicious and healthy egg bhurji is ready to be served.
  • Serve this anda bhurji or scrambled eggs with rice or bread or pav or chapati or parathas.
