Mix 1 cup sooji, ½ cup curd, ½ tsp salt, and 1 cup water in a bowl. Cover and rest for 15 mins.
Add all chopped veggies, chaat masala, red chilli powder and Salt and mix well.
In sooji batter, Add 1 tsp oil, and ¼ tsp baking soda. Mix well.
Now mix vegetable and sooji batter and mix well.
Heat a pan, pour batter, spread gently.
Drizzle oil, cook 2-3 mins per side until golden.
Toast bread with ghee/butter from one side and flip.
Add ketchup, eggless omelet, and cheese (optional) on one slice of bread.
Cover with the second toasted bread slice.
Toast until golden brown.
Cut into halves, serve with chutney or tea.
