Ingredients
  

For the Eggless Sooji Omelette:

  • 1 cup Sooji / Semolina / Rava
  • ½ cup Curd / Yogurt
  • 1 cup Water (adjust as needed)
  • ½ cup Onion (finely chopped)
  • ¼ cup Capsicum (finely chopped)
  • ¼ cup Carrot (grated or finely chopped)
  • ½ cup Cabbage (finely chopped)
  • 1 tbsp Fresh Coriander Leaves (finely chopped)
  • ½ tsp Chaat Masala
  • ¼ tsp Red Chili Powder
  • 1 tsp Oil
  • ¼ tsp Baking Soda
  • 1 tsp Salt (adjust as per your taste)
  • 2 tbsp Oil / Butter (for cooking)

For the No Egg Omelette Sandwich:

  • 8 slices Bread (white, brown, or multigrain)
  • 2 tbsp Ghee / Butter (for toasting the bread)
  • 2 tbsp Tomato Ketchup (for extra flavor)
  • 4 cheese slices (optional, for a cheesy sandwich)

Instructions
 

  • Mix 1 cup sooji, ½ cup curd, ½ tsp salt, and 1 cup water in a bowl. Cover and rest for 15 mins.
  • Add all chopped veggies, chaat masala, red chilli powder and Salt and mix well.
  • In sooji batter, Add 1 tsp oil, and ¼ tsp baking soda. Mix well.
  • Now mix vegetable and sooji batter and mix well.
  • Heat a pan, pour batter, spread gently.
  • Drizzle oil, cook 2-3 mins per side until golden.
  • Toast bread with ghee/butter from one side and flip.
  • Add ketchup, eggless omelet, and cheese (optional) on one slice of bread.
  • Cover with the second toasted bread slice.
  • Toast until golden brown.
  • Cut into halves, serve with chutney or tea.

Step by Step Recipe

Step 1: Prepare the No Egg Omelette Batter

1. Take a mixing bowl and add 1 cup sooji (semolina or rava), ½ cup curd (yogurt) and ½ tsp salt.

2. Mix well using a spoon or whisk.

3. Add 1 cup water gradually while stirring to make a smooth batter.

4. Let the batter rest for 15-20 minutes so that the sooji absorbs water and becomes soft.

5. Now take another bowl, and add finely chopped ½ cup Onion, ¼ cup Capsicum, ½ cup Cabbage, 1 tbsp Fresh Coriander Leaves, and ¼ cup grated Carrot.

6. Further add ½ tsp of chaat masala, ¼ tsp red chilli powder and ½ tsp of Salt and mix all the ingredients well. Keep aside.

7. After resting the sooji/rava batter, add 1 tsp oil and ¼ tsp baking soda and mix well.
Now add 1½ cups of mixed vegetable mixture and mix well.

8. The batter should be thick yet spreadable. If needed, add a little water. Well, Veggies will also release some water.

Step 2: Cook the Eggless Rava/Suji Omelet

1. Heat a non-stick pan or tawa on medium heat.

2. Pour one ladleful of veggie and rava/sooji batter onto the pan.

3. Gently spread it like a pancake (do not make it too thin).

4. Spread a little bit of oil evenly on the edges of the omelet.

5. Cook for 2-3 minutes until the bottom turns golden brown.

6. Flip the omelette without egg carefully. Press gently and cook the other side for 2-3 minutes.

7. Transfer the cooked eggless omelet to a plate.

8. Repeat the process to make more sooji omelettes.

9. You can also eat this vegetable omelette without egg as it is or make a sandwich with it.

Step 3: Assemble the Sandwich

1. Heat a non-stick tawa on low-medium flame.

2. Spread some ghee / butter and lightly toast the two slices of bread.

3. Press gently and cook for a few seconds.

4. Turn the bread slices over.

5. Spread tomato ketchup on one slice of bread for extra flavour.

6. Place the cooked vegetable sooji omelet on one slice of bread.

7. Add a cheese slice on top if you like a cheesy sandwich (totally optional).

8. Cover with the second toasted bread slice.

9. Now toast it again from both sides to golden brown.

10. Repeat the process for more sandwiches.

Step 4: Serve & Enjoy
