This Gobhi Pickle Recipe or cauliflower Pickle Recipe is an excellent accompaniment to any Indian breakfast recipe, lunch recipe, or dinner recipes.

I learned this Gobhi Achar ki recipe or phool gobhi achar recipe from my mom. My hubby who usually doesn’t like to eat pickles just loves this cauliflower pickle with everything.

When we make this Punjabi gobi pickled during winter, the taste of the gobi ka achaar ki recipe is great with any Indian Flatbread Recipes and with other combos like dal chawal, chole bhature, and rajma rice too.

This gobhi ka achar punjabi style is made with fresh cauliflower aka gobhi. The spices used in this pickle are similar to any traditional winter special pickle recipe but have the extra flavours of cauliflower in it.

There are many different recipes to make this cauliflower mustard pickle recipe (gobhi ka rai ka achaar) but this is my mom’s recipe with a few variations of my own.

Ingredients for Cauliflower Pickle Recipe:

  • 500 grams Cauliflower / Phool Gobhi (chopped)
  • ¼ cup Mustard Oil
  • ¼ tsp Asafoetida (Hing)
  • 2 tbsp Rai (Grounded)
  • ½ tsp Turmeric Powder
  • ½ tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • 1 tsp Salt (adjust as per taste)

Instructions
 

How to make Cauliflower Pickle | Gobhi Achar Recipe:

  • First, chop the cauliflower in medium florets.
  • Secondly, rinse the gobhi and drain the excess water.
  • Further, Heat enough water in a utensil. Put all the cauliflower pieces in boiling water, and boil for 3-4 minutes.
  • After that, strain the water from the vegetable with the help of a strainer.
  • Now, dry the gobi on a thick cloth for 4-5 hours in the sunlight.
  • When all the water has dried up then put the gobhi in a big bowl.
  • Additionally, add Mustard Oil, Asafoetida (Hing), Rai (Grounded), Turmeric Powder, Red Chilli Powder, Coriander Powder, and Salt (adjust as per taste).
  • Mix all the ingredients well.
  • After that, fill the gobhi ka rai achar in a dry glass or plastic container.
  • Now, put the pickle in the sunlight for 3-4 days.
  • Stir the cauliflower pickle once a day.
  • The pickle will turn sour and tasty in 3-4 days.
  • Finally, the gobhi pickle is ready.
  • You can make a gobi pickle Indian recipe whenever you want and use it for up to 20-25 days.
  • Enjoy eating snacks and meals with mouthwatering gobi ka achar pickles!

How to make Cauliflower Pickle | Gobhi ka Achar Recipe with step-by-step photos:
