Step-by-Step Recipe
Step 1: Prepare the Vegetable Mix
1. In a mixing bowl, add finely chopped vegetables: 1 Onion, ½ Capsicum, 1 Tomato, 2 tbsp Cabbage, 1 Green Chilli, 2 tbsp Coriander, 1 tbsp grated Carrot, and 1 inch grated Ginger.

2. Sprinkle ½ tsp salt, ½ tsp chaat masala, and ¼ tsp red chilli powder.

3. Mix everything well.
4. Let this mixture rest for 10 minutes. This helps the veggies release some moisture and absorb the flavours, making the uttapam tastier and easier to mix with the batter.

Step 2: Prepare the Batter

6. Add ½ tsp salt (or less, since the veggies already contain salt). Mix well.

Step 3: Combine Batter and Veggies

15. Open the lid and drizzle a little oil on the top side, then flip the veggie uttapam.
16. Cook the other side as well.
17. Flip it and cook from both sides till golden and crisp.


Step 6: How to Serve
