- 1 tsp Green Chilli (finely chopped)
- 1 tsp Ginger (grated)
- 1 pinch Hing / Asafoetida
- ½ tsp Cumin seeds / Jeera
- 2 tsp Coriander Powder
- ½ tsp Red Chili Powder
- ¼ tsp Turmeric Powder
- ½ tsp Garam Masala
- ½ tsp Kashmiri Red Chilli Powder (optional – for the colour)
- 1 tsp Roasted Gram Flour / Besan
- 2 tsp Curd / Dahi
- 2 cups Water (as needed)
- ½ tsp Salt (adjust as per taste)
- Fresh coriander leaves (chopped)

- Prepare Lauki: Peel, grate, and squeeze out the water from the bottle gourd. Save the water for the gravy.
