How to make Mumbai style pav bhaji | Bombay Bhaji Pav Recipe with step-by-step photos:

1. Firstly, heat 2 tbsp of oil or butter in a pressure cooker and add cumin seeds and saute it for a few seconds.

2. After that add chopped potatoes, tomatoes, beetroot, pumpkin, carrot, and green peas.

3. Additionally, add salt, and 1 tsp of pav bhaji masala.

4. Now add 3 cups of water and mix all the ingredients well.

5. Pressure cook for 3-4 whistles.

6. Open the lid and cool completely the cooked vegetables.

7. Mash the vegetables smoothly with the help of a masher and make sure there are no lumps. Keep them aside.

8. Heat a large pan or skillet on medium heat and melt 2 tsp of ghee and 2 tsp of oil. If you want butter then add butter instead of oil and ghee.

9. Now, add asafoetida/Hing and Rai/Mustard Seeds and saute for a few seconds.

10. Add the finely chopped garlic, ginger, and green chili, and cook for a minute until the raw smell disappears.

11. Additionally, add finely chopped onions and saute until they turn translucent.

12. Now, add the finely chopped capsicum (bell peppers) and cook for a few minutes until they become tender.

13. Add the pav bhaji masala, red chili powder, and kasuri methi. Mix all the spices well with the vegetable mixture.

14. After that, add the boiled and mashed vegetables and mix well all the ingredients.

15. Add Salt, Amchur Powder, Lemon Juice, and a pinch of red color and mix well.
