- 1 cup Raw Mango grated
- 5 tbsp Sugar
- 1 tsp Salt
- ½ tsp Black Pepper Powder
- ¼ tsp Crushed Cardamom
- ¼ tsp Red Chilli Powder
- ¼ tsp Garam Masala

- Add 1 cup of grated raw mangoes, 5 tbsp of sugar, and 1 tsp of salt in a large mixing bowl.
- Mix well until the sugar and salt are evenly distributed.
- Cover the bowl and let the mixture sit overnight, allowing the flavors to meld and the mango to release its juices.
- The next day, transfer the mango mixture to a pan, including the syrup that has formed overnight.
- Add ½ tsp Black Pepper Powder, ¼ tsp Crushed Cardamom, ¼ tsp Red Chilli Powder, ¼ tsp Garam Masala and mix well.
- Cook the mixture on low-medium heat, stirring occasionally, until the mangoes soften further. This should take about 12-15 minutes.
- Taste the chutney and adjust the sweetness by adding more sugar if needed.
- Once the chutney has reached the desired consistency, remove it from the heat and let it cool completely.
- Transfer the aam ki khatti meethi chutney to an airtight container and store it.
