Ingredients
  

  • 1 cup Raw Mango grated
  • 5 tbsp Sugar
  • 1 tsp Salt
  • ½ tsp Black Pepper Powder
  • ¼ tsp Crushed Cardamom
  • ¼ tsp Red Chilli Powder
  • ¼ tsp Garam Masala

Instructions
 

  • Add 1 cup of grated raw mangoes, 5 tbsp of sugar, and 1 tsp of salt in a large mixing bowl.
  • Mix well until the sugar and salt are evenly distributed.
  • Cover the bowl and let the mixture sit overnight, allowing the flavors to meld and the mango to release its juices.
  • The next day, transfer the mango mixture to a pan, including the syrup that has formed overnight.
  • Add ½ tsp Black Pepper Powder, ¼ tsp Crushed Cardamom, ¼ tsp Red Chilli Powder, ¼ tsp Garam Masala and mix well.
  • Cook the mixture on low-medium heat, stirring occasionally, until the mangoes soften further. This should take about 12-15 minutes.
  • Taste the chutney and adjust the sweetness by adding more sugar if needed.
  • Once the chutney has reached the desired consistency, remove it from the heat and let it cool completely.
  • Transfer the aam ki khatti meethi chutney to an airtight container and store it.
