Ingredients
  

  • 500 grams Singhara / Water Chestnut
  • 2 tbsp Ghee
  • ½ tsp Cumin Seeds / Jeera
  • 2 Green Chilies finely chopped
  • 1 tsp Ginger grated
  • 1 tsp Sendha Namak / Rock Salt adjust as per taste
  • ½ tsp Red Chili Powder optional
  • 2 tsp Coriander Powder
  • tsp Lemon Juice
  • 2 tbsp Fresh Coriander finely chopped

Instructions
 

  • Wash the Singhara thoroughly and pressure cook with water for 2 whistles. Once cooled, strain, peel, and chop into bite-sized pieces.
  • Heat ghee in a pan, add cumin seeds and let them splutter.
  • Saute chopped green chilies and ginger, coriander powder, red chili powder (optional), and the chopped Singhara.
  • Season with rock salt and lemon juice.
  • Cook for 8-10 minutes, stirring occasionally until the Singhara is well-coated with spices.
  • Garnish with fresh coriander and serve hot with Kuttu ka paratha or poori during Navratri fasting.

Step-by-Step Recipe

1. Wash the 500 grams of Singhara (Water Chestnuts) thoroughly.

2. Place them in a pressure cooker with enough water and cook for 2 whistles.

3. Once the pressure releases and the Singhara cools down, open the cooker, strain the water, and peel them.

4. Now chop the Singhara into bite-sized pieces.

5. In a kadai/pan, heat 2 tbsp of ghee over medium heat.

6. Add ½ tsp of cumin seeds and let them splutter.

7. Add 2 tsp Coriander Powder, ½ tsp Red Chili Powder (optional), 2 finely chopped green chilies, and 1 tsp grated ginger. Saute for a few seconds until fragrant.

8. Further, add chopped Singhara to the pan and mix well.

9. Add 1 tsp sendha namak/rock salt, and 1½ tsp Lemon Juice. Stir until well combined.

10. Cook for 8-10 minutes on medium heat, stirring occasionally, until the water chestnuts are cooked and the Singhara is coated with the spices.

11. Turn off the heat, and garnish with chopped fresh coriander.

12. Enjoy your Singhara Chat hot as a snack or as a singhara sukhi sabji with Kuttu ka paratha or Kuttu Poori during Navratri fasting.
