Mostly Kuttu ke parathe are made with kuttu flour & mashed potatoes but here I am sharing another version of kuttu parathas where I made this falahari paratha with kuttu flour and mashed potatoes and arbi.
Different between Kuttu Aloo Paratha Recipe and Arbi Kuttu Paratha Recipe:
The difference between both parathas is in only the kneading of the dough. In Kuttu Aloo Paratha, only kuttu flour and boiled and grated potatoes are used.
But in Arbi Kuttu Paratha, kuttu flour/atta is used with boiled and grated potatoes and arbi. Personally, I like the texture and taste of kuttu arbi paratha.

Ingredients
Kuttu Paratha Ingredients:
- 2 cups Kuttu Atta / Buckwheat Flour
- 1 cup Boiled and grated Potato
- 1 cup Boiled and grated Arbi
- 1 tsp Sendha Namak / Rock Salt
- 1 cup Oil
Instructions
Kuttu Dough Recipe for Parathas:
- Firstly, take 2 cups of kuttu atta/flour in a Parat or big bowl.
- Method 1: "Dough for Kuttu Aloo Paratha Recipe" – Add 2 cups of boiled and grated potatoes and 1 tsp of sendha namak or rock salt.
- Method 2: "Dough for Arbi Kuttu Paratha Recipe" – Add one cup of boiled and grated potatoes and one cup of boiled and grated arbi/arvi, and 1 tsp of sendha namak or rock salt.
- After that, combine all the ingredients and Knead them into a smooth dough.
- Keep kneading this Kuttu dough for about 2 minutes.
- Tip: The dough should not be sticky. Otherwise, you won’t be able to roll the parathas.
- Finally, cover and keep the kuttu paratha dough aside for 5 minutes.
Kuttu ka Paratha | Kuttu Atta Paratha Recipe:
- After 5 minutes, knead the dough slightly.
- Further, divide into equal medium-sized smooth balls from the dough, and flatten between your palm one by one with the help of dry kuttu flour.
- Now, take one atta ball and sprinkle kuttu atta on the surface so that the dough doesn't stick to your rolling pin or surface.
- Further, roll this kuttu paratha to about the same size as that of a chapati. If you are unable to roll kuttu parathas directly, then make use of two plastic sheets to roll parathe.
- Now, place the kuttu atta paratha on a hot Tawa.
- When one side has partly cooked, flip the paratha.
- When another side of kuttu arbi paratha is also partially cooked as well then drizzle some oil/ghee.
- Flip again and spread some oil/ghee on another side too.
- After that, flip again once or twice till both sides of the kuttu ka paratha are cooked properly. You should see crisp brown spots on the kuttu potato paratha.
- Further, make all kuttu parathas this way and stack them up in a roti basket or casserole.
- Finally, your delicious and hot kuttu parathas for navratri fast are ready to be served.
- You can serve this kuttu ke parathe with navratri special Aloo Curry, Arbi Sabzi and kaddu ki sabji.
Notes
- The color of the paratha totally depends on kuttu flour’s brand actually some flour is lighter in color while some are darker.
- Please mash the potatoes and arbi well.
- The dough of kuttu parathas should not be sticky. Otherwise, you won’t be able to roll the paratha.
- You can also use singhara atta instead of kuttu atta for this paratha.
