Ingredients
  

Ingredients for Boiling Soya Chunks:

  • 1 cup Soya Chunks
  • 2 cups Water
  • ½ tsp Salt

For Spinach Gravy:

  • 2 cups Spinach / Palak (washed and chopped)
  • 1 Green Chili
  • ½ tsp Salt
  • ½ cup Water

For the Curry:

  • 1 Onion (finely chopped)
  • 2 Tomatoes (pureed)
  • 1 tsp Ginger-Garlic Paste
  • 1 tsp Cumin Seeds / Jeera
  • ½ tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp Red Chili Powder (adjust to taste)
  • ½ tsp Garam Masala
  • 2 tbsp Oil
  • ¼ cup Water (adjust as needed)

Instructions
 

  • Boil Soya Chunks: Boil soya chunks in salted water for 5–7 minutes. Rinse with fresh water, squeeze out excess water, and set aside.
  • Make Spinach Puree: Blanch spinach with green chili in water for 2 minutes, cool, and blend into a smooth puree.
  • Prepare Masala: Heat oil, add cumin seeds, then sauté onion, ginger-garlic paste, and tomato puree until oil separates.
  • Add Spices: Mix turmeric, coriander powder, red chili powder, and salt. Cook for 2–3 minutes.
  • Cook the Curry: Add spinach puree and soya chunks, mix well, and simmer for 5 minutes. Adjust water as needed.
  • Final Touch: Add garam masala, mix, and turn off the heat. Serve hot with roti, naan, or rice.

Step by Step Recipe

Step 1: Boil the Soya Chunks

1. In a pan, boil 1 cup soya chunks in 2 cups water with ½ teaspoon salt for 5–7 minutes.

2. Once soft, drain the water and rinse the soya chunks with fresh water 2–3 times.
Squeeze out excess water and keep them aside.

Step 2: Prepare the Spinach Gravy

1. Heat ½ cup water in a pan and add 2 cups chopped spinach and 1 green chili.

2. Cook for 2–3 minutes until the spinach softens.

3. Let it cool slightly, then blend into a smooth puree using a mixer. Keep aside.

1. Heat 2 tablespoons oil in a pan.

2. Add 1 teaspoon cumin seeds and let them splutter.

3. Further, add 1 finely chopped onion and saute until golden brown.

4. Add 1 tsp ginger-garlic paste and saute for a few seconds.

5. Add 2 pureed tomatoes and cook until the oil separates.

6. Add dry spices like ½ tsp turmeric powder, 1 tsp coriander powder, 1 tsp red chili powder, ½ tsp salt.

7. Mix well and cook for 2–3 minutes.
