Makhane ki kheer is an Indian Sweets also known as Makhana Pudding Recipe, made with Makhana/Foxnuts/Phool makhana, milk, sugar, and some dry fruits.

This Makhane ki kheer is a traditional milk-based Indian dessert recipe made with just a few basic ingredients. For a quick makhana kheer recipe, you can make this with a milkmaid too.

It is one of the most delicious dessert recipes which can be served on auspicious occasions like Mahashivratri vrat, Navratri Fast, Ekadasi Fast, Janmashtami, or other fasting days.

I first made this Makhana kheer during Monday’s fast. This Makhane ki kheer Navratri is very simple and easy and takes only 30 minutes to make using basic ingredients.

What is Makhana?

Makhane is also known as fox nuts, lotus seeds, Euryale Ferox, Gorgon Nuts, and Phool makhana. This is a species of water lily found in southern and eastern Asia.

This has high nutritious value and is primarily grown in the state of Bihar in India. These makhanas are eaten in Asia in many forms like raw form, roasted, fried, and in some Indian desserts like makhana burfi, makhana puddings, etc.

Makhane ki Kheer is wonderfully light and very easy and quick to prepare. This makhana kheer recipe has 200 calories in one cup but if you are a health lover then you can make this in low-fat milk and without sugar.

This makhana kheer without sugar has 98 calories in one cup. You can also make this makhana kheer with jaggery.

How to make Makhana Kheer | Makhana Sweet Recipe with step by step photos:

1. Firstly, cut the makhana and roast it for a few seconds until the makhana becomes crunchy.

2. You can also roast it for a few seconds in the microwave too.

3. After that remove the roasted makhana to a plate and let it cool down.

4. Further, grind them into a coarse powder and keep it aside.

5. Heat one liter of milk in a heavy-bottomed pan/bhigona.

6. First, boil the milk and after that keep the heat on low-medium and Stir at intervals so that the milk does not scorch from the bottom.

7. Now, add roasted and coarse makhana powder.

8. Mix well and cook on low-medium heat for about 8-10 minutes till the makhana softens and the milk thickens a bit

9. Stir the kheer in between.

10. Scrape the evaporated milk solids from the sides of pan/bhigona and add to the kheer.

11. Keep in mind that once the makhane ki kheer cools down, will thicken more. So keep the consistency of makhana kheer according to your choice.

12. After that, add cardamom powder and sugar and mix well.

13. Cook for another 4-5 minutes and stir in between.

14. Additionally, add raisins and mix well.

15. Further, add chopped dry fruits like almonds, and cashews and mix well.

16. Cook for a few seconds and stir in between.

17. Scrape the evaporated milk solids from the sides of pan/bhigona and add to the kheer.

18. Finally, delicious and tempting Makhana Kheer is ready now.

19. Serve makhane ki kheer hot or chilled. I personally like the chilled Makhana Kheer.
