Step-by-Step Recipe
Step 1: Boil the Milk
1. In a heavy-bottomed pan, pour 2 litres of full cream milk and bring it to a boil over medium heat.

2. Stir occasionally to prevent the milk from sticking to the bottom.

Step 2: Add Roasted Vermicelli
3. Once the milk comes to a boil, add 1½ cups of roasted vermicelli (java) to the milk. Stir well.

4. If you are using unroasted vermicelli/jave/seviyan, roast it in 2 tablespoons of ghee until golden brown, then proceed.

Step 3: Add Cardamom Powder
5. Further, add ¼ teaspoon of cardamom powder into the kheer and mix well.

Step 4: Cook the Vermicelli
6. Let the vermicelli/seviyan cook in the milk on a medium flame for about 10-12 minutes, or until it becomes soft.

7. Keep stirring occasionally to avoid sticking or burning.

Step 5: Add Sugar
8. Now add ½ cup of sugar and mix well. For a healthier version, you can replace sugar with a sugar-free sweetener of your choice.

9. Stir until the sugar completely dissolves into the milk.
10. Taste and adjust the sweetness if required.

Step 6: Add Dry Fruits and Raisins
11. Add 2 tablespoons of chopped cashews and almonds along with 1 tablespoon of raisins (kishmish).

12. Let it simmer for another 5-6 minutes.

Step 7: Serve Vermicelli Kheer or Seviyan Kheer

2. Stir the sevai or jave ki kheer continuously after adding vermicelli to prevent it from sticking to the bottom.
3. If using unroasted vermicelli, lightly roast it in ghee for a rich, nutty flavour.
4. Soak raisins in warm water for a few minutes to make them soft and plump before adding to the kheer.
5. You can add a few saffron strands soaked in warm milk for extra colour and aroma.
6. As the kheer cools, it thickens. Add a little warm milk while reheating if needed.
7. For festive occasions, garnish with silver vark and a few slivered pistachios.
