Step by Step Recipe:
1. Start by chopping and washing the fresh fenugreek (methi) leaves. Drain off any excess water. Do not leave any water in it.

2. In a large mixing bowl, take 2 cups of whole wheat flour (atta) and add ½ tsp of salt. Adjust the salt to your taste.

3. Gradually add water, a little at a time, and mix everything together. Knead the mixture into a semi-soft dough.
4. Knead the dough for about 4-5 minutes to make it smooth and pliable.

5. Cover the dough with a damp cloth and let it rest for 25-30 minutes.

6. After this, Divide the dough into equal-sized balls.

7. Take one ball of dough and roll it out into a small circle (about 4-5 inches in diameter) on a lightly floured surface.

8. Place 3 tsp of the chopped methi in the center of the circle.
9. Further add 1 pinch asafoetida / hing, ¼ tsp chaat masala, 1 pinch carom seeds / ajwain, ⅛ tsp red chilli powder, and ⅛ tsp salt.

10. Bring the edges of the dough together to enclose the filling, pinching the seams together at the top.

11. Flatten the stuffed dough ball gently with your palm and dust it with flour.

12. Roll out the stuffed ball into a circle of about 6-7 inches in diameter, using a rolling pin. Ensure the filling is evenly distributed.

Tips for Making Perfect Methi Stuffed Paratha
1. Use Fresh and Dry Methi: Wash and drain fenugreek leaves thoroughly to remove dirt and excess water. This prevents the filling from becoming too moist.
2. Seal the Dough Properly: Ensure the edges are sealed tightly after pleating to avoid the filling from spilling out while rolling or cooking.
3. Knead Soft Dough: Knead the dough until smooth and soft. Rest it for 25-30 minutes for easier rolling and softer parathas.
4. Cook on Medium Heat: Always cook the parathas on medium heat for an even, golden-brown finish without burning. Use ghee for added flavor.
