This Potato Curry Recipe is a simple and quick sabji recipe that is made with boiled potatoes. It is eaten especially during fast or vrat like Navratri, Mahashivratri, Chaturthi, Ekadashi, Janmashtami, etc.

We call this aloo sabzi for navratri fast with many names like Vrat wale Aloo, Navratri Potato Curry Recipe, Sendha Namak wale Aloo, Aalu Sabji, potato bhaji, aloo rasedar, vrat ke aloo ki sabzi without tomato, etc.

It is a popular and easy Indian Curry Recipe that is specially made during Indian festivals like Navratri or Shivratri or any fasting days or upvas and takes just only 20 minutes.

This Vrat wale aloo ki sabji is made without onion or garlic and no tomato. In my home, we can’t eat tomatoes on Navratris or any fasting day that’s why this is the best curry option “vrat ke aloo ki sabzi without tomato”.

This Potato Curry Recipe for Navratri is served with Kuttu Paratha, Kuttu Poori, Kuttu Cheela, etc along with any dry sabji and curd. This aalu ki sabji in a pressure cooker tastes great with ghee.

Boiled and roughly mashed potatoes are simmered in a spice-based gravy. I have added just a few ingredients to this vrat wali aloo ki sabji and cooked it for 10-15 minutes on low flame.

Ingredients
  

Navratri Potato Curry Ingredients:

  • 6 medium Boiled Potatoes
  • 2 tbsp Oil / Ghee
  • 2 tsp Coriander Powder
  • ¼ tsp Red Chili Powder (optional)
  • ¼ tsp Black Pepper Powder
  • 1 tsp Green Chili (finely chopped)
  • 1 tsp Grated Ginger
  • 5 cups Water (as required)
  • 1 tsp Sendha Namak / Salt (as needed)
  • ½ tsp Homemade Amchur Powder / Lemon Juice
  • 2 tbsp Fresh Coriander (finely chopped)

Instructions
 

  • Firstly, roughly mashed the boiled potatoes and keep them aside.
  • After that, heat ghee/oil in a pressure cooker.
  • Further, add cumin seeds and let them sizzle.
  • Additionally, add coriander powder, red chili powder, black pepper powder, green chili, and grated ginger and saute for a few seconds.
  • Now, add water as required for boiled potatoes and mix well.
  • After boiling water, add roughly mashed potatoes, and mix well. Adjust the consistency of the water.
  • Further, add sendha namak or rock salt as required.
  • Simmer on a low flame till the aloo gravy thickens a bit and stir in between.
  • After that, add homemade amchur powder or lemon juice in it and mix well.
  • Cook this aloo sabzi for navratri on low flame for a few minutes.
  • When the potato curry for fast or vrat is done then you will see some oil on the top of this sabzi.
  • Now, add finely chopped fresh coriander and mix well all the ingredients.
  • Finally, Vrat wale Aloo is ready and served with Kuttu Paratha, Kuttu Poori, or Kuttu Cheela.

Notes

  • You can thicken the potato curry sabzi less or more as per your taste.
  • The gravy will thicken more when it cools down so adjust the consistency.

Step by Step Recipe

How to make Potato Curry | Vrat wale Aloo Sabzi Recipe for Navratri fast or vrat with step by step photos:

1. Firstly, roughly mashed the boiled potatoes and keep them aside.

2. After that, heat ghee/oil in a pressure cooker.

3. Further, add cumin seeds and let them sizzle.

9. After that, add homemade amchur powder or lemon juice in it and mix well.

10. Cook this aloo sabzi for navratri on low flame for a few minutes.

11. When the potato curry for fast or vrat is done then you will see some oil on the top of this sabzi.

12. Now, add finely chopped fresh coriander and mix well all the ingredients.

13. Finally, Vrat wale Aloo is ready and served with Kuttu Paratha, Kuttu Poori, or Kuttu Cheela.
